Good food feels like a journey, where you experience the flavors, the atmosphere and the community around the meal.
Simen Einebakken Eliassen is the founder of Eliassen Matkunst, a company established in 2023 starting from the operation of the kitchen at Lyngen Experience Lodge. Eliassen Matkunst has since expanded its business to include private chef assignments, food production and now its latest project – the restaurant Emmer, which opened in 2024 in Nord-Lenangen, Lyngen Municipality.
With a focus on quality, sustainability and local roots, the concept of Eliassen Matkunst is based on the use of local ingredients from Lyngen and Northern Norway. We prioritize holistic utilization of raw materials, such as whole animals, in order to minimize food waste, reduce costs and make short-distance food available to more people.
